Foccacia


A veces os creeis que hornear productos fermentados es casi misión imposible. Sin embargo es una faena fácil, es necesario una pequeña planificación ya que hay que esperar un tiempo para que la masa fermente, en la fermentación está el secreto del  sabor del pan. Yo siempre les digo a mis alumnas que cuando vayan a elaborar pan, deben de tener  paciencia...... paciencia..... paciencia.

No hay nada más gratificante que el aroma que inunda  vuestra casa mientras horneamos pan, así que la espera merece la pena.

La vida no volverá a ser la misma, una vez aprendais hacer pan.

Hoy os traigo un pan llamado  Focaccia: es un pan plano cubierta con hierbas y aceite de oliva, aunque tambien se le puede poner otros ingredientes como esta que les presento, le puse aceitunas negras  y tomate.

 La foccacia por decirlo de alguna manera es familia directa de la pizza, su origen no es claro pues tanto los griegos como los etruscos asumen su autoría.

Actualmente la focaccia no es exclusiva de la comunidad italiana, pues se ha extendido su consumo en todo el mundo y se consigue en panaderias, restaurantes e inclusive en grandes superficies que venden alimentos, inclusive se pueden hacer bocadillos con ella, al gusto de quien lo va a consumir.

Y antes de meter mannos a la masa, les pongo la receta.

Ingredientes ( 12 pax)

500 gr de harina de fuerza
1 cdta de sal
2 cdta de levadura seca
350 gr de agua
6 cdas de aceite de oliva
120 gr de aceitunas negras deshuesadas
3 tomates picados en rodajas
Quesos
Hierbas provenzales

Procedimiento

En un cuenco colocar la harina y la levadura, añadir el agua y 2 cdas de aceite de oliva, y mezclar hasta obtener una masa suave y elástica, en ese momento  añadis la sal.
Os recuerdo que la sal inhibe la acción de la levadura, por lo que se añade luego que el bollo está formado..

El bollo se coloca en un cuenco y se tapa con plástico y un paño, durante 1 hora, hasta que doble su vólumen.

Untar las bandejas con aceite, sacar el bollo del cuenco y se coloca en la encimera, para desgacificar, quiero decir  aplanais con las palmas de las manos para eliminar el aire retenido. Extender sobre la bandeja, se y se tapa con plástico durante 1 hora para dejar fermentar.

Presionen la masa con los dedos para formar hoyitos, rociela con 2 cucharadas de aceite y empolvoree con hierbas provenzales, se le colocan las aceitunas y las rodajas de tomate y queso.

Precalentar el horno a 200ºC y hornear por 30 a 35 minutos hasta que estén doradas. Rociarlas con el resto de aceite de oliva y cubrirlas con un paño para que la corteza quede blanda

Aqui les pongo 4 que hice 2 de cebolla con atún y 2 con quesos.
